According to my husband (2 weeks in, still feels weird & wonderful haha), this is probably the best thing that has come out of my kitchen. In fact, it’s so good that even though I would like to be able to tell you about shelf life, David doesn’t let them last more than a few hours! Don’t let the simplicity of this recipe fool you, these chips are salty, creamy, crunchy, cheesy, basically everything you could want in a chip for just 7 calories a piece! I suggest making a big batch of them and storing 10-15 at a time in mini zip top bags so you can pack them for lunch or on the run! Each chip is about 2 inches in diameter.

These are really delicious to just snack on but here’s a few other also tasty ways to use them:

  • Broken up in salads
  • Dunked in soup, especially your favorite tomato soup!
  • On paninis (or gluten free paninis)
  • Tossed with your favorite pasta recipe
  • As a cracker for your favorite mixed salad (tomato + kalamatas + olive oil + a dash of balsamic glaze would be great!)

Cauliflower ‘Bread’ Sticks - To-die-for mock bread-sticks made with cauliflower that are low in calories, carbs and fat….RECIPE

INGREDIENTS:

1 head cauliflower, large (7” - 8” wide)

1/4 cup egg whites

1/2 cup + 3/4 cup (for topping, optional) Mozzarella/Tex Mex cheese, shredded

1 tsp Italian herb seasoning or any dried herbs like rosemary, basil, parsley

1/4 tsp freshly ground black pepper

Pinch of salt

Marinara sauce for dipping

I can verify this tastes amazing

Banana Oatmeal Breakfast MuffinsRECIPE

Ingredients:

2.5 cups old fashioned oats 

1 cup plain low fat greek yogurt

2 eggs

1/2 cup honey

2 tsp baking powder

1 tsp baking soda

2 TBSP ground flax seed

1 tsp vanilla

2 ripe bananas 

These are so good!!

This recipe has been a long time in the making- I had to wait for my faithful and excited test subject (my fiance) to have a free weekend to test these until they were perfect haha! We went through 4 incarnations of cheese to crumb ratio before settling on this as the perfect blend. David loved the Parmesan in the crust and I just loved having my mozzarella sticks back from the gluten graveyard! :) If you want the crumbs to be a little toastier you can swirl them in a pan for a few minutes but make sure to cool before mixing with Parm! You could also experiment with adding other spices or other types of cheese sticks (cheddar & rosemary?). Best of all? At just 20 calories of stick (and slightly under 1g of fat actually), these are a classic favorite you can feel awesome about!
